Florida Couple Creates Florida’s Only Artisan Distilled Whiskey

  Dick Waters has been a plumber, a contractor and a cattle farmer but together with his wife Marti Waters they have brought Palm Ridge Reserve Whiskey to market to become the only whiskey distilled and bottled in Florida. They are the Sunshine State’s contribution to a new breed of artisan boutique distillers with an operation that only produces 500 cases of their high quality 90 proof, Florida Bourbon-style whiskey.

Using Florida corn, barley malt, toasted flaked rye and rye malt,  Dick Waters performs every part of the whiskey-making process in Umatilla, Florida in a small 60 Gallon reflux-column copper still. The result is approximately 5 gallons of premium Palm Ridge Reserve  that is then rested in small 5 gallon charred oak barrels that quickly rounds out and matures the whiskey in less than a year.

Only 500 cases per year are produced and bottled of this non-chill filtered Bourbon-style  whiskey that are mellowed to a profile that features the natural taste of the selected grains with tones of toasted orange and oak woods.   Waters uses four grains, corn, barley, malt, Rye and toasted flaked Rye.

Palm Ridge Reserve Whiskey was really Marti Waters idea and her motivation was to find a way to save their horse and cattle ranch. After reading a magazine article about the rise of handcrafted micro-batch distilleries a couple of years ago, Marti decided to investigate the possibilities.  Dick Waters a former Crown Royal drinker got Marti’s call at work  and their idea, quickly became a dream and a plan was set in place. 

Waters knew he’d need a bolder and more distinctive flavor palate than the lighter, sweeter Canadian blend and he knew that the small batches would allow him to pay attention to the consistency and quality of the blend.

Dick makes his whiskey by taste,  every Tuesday, Thursday and Saturday in a 10-stall horse barn just outside of Umatilla, Florida which is about 50 miles northwest of Orlando. The stalls now have over 100,  5-gallon American oak barrels  and an8-foot-tall still and 50-gallon drums in addition to Marti’s home bottling operation.

Packaged only  in .750 ml bottles Palm Ridge Reserve Whiskey  is way more than a local favorite and has become a buzz within the industry and can be found on elite bar lists including the one at New York’s Waldorf-Astoria Hotel Bar.

In Florida, Republic National Distributors (RNDC) is the exclusive distributor of Palm Ridge Reserve Whiskey and  only a few select accounts currently offer this excellent Florida whiskey.  Total Wine is the best bet to find it statewide for consumer sales.
